WHAT IS ROMAN-STYLE PIZZA?

Unlike the familiar round Neapolitan-style pies, Roman pizza is baked in long rectangular trays. It features a light, airy crust with a crispy bottom, achieved through a slow fermentation process and high-hydration dough. The result is a crust that's both crispy and tender, with toppings that range from the traditional to the inventive.
